Description

Calcium propionate with C6H10CaO4 chemical formula is a natural calcium salt of propionic acid. This product is also known as calcium propanoate and is used as a food additive(E282) and preservative in bread, whey, dairy product, and processed meat. Shanghai Chemex is one of the most reputable suppliers of this chemical in the world.

Physical and Chemical Properties of Calcium Propionate:

Calcium propionate is in the form of crystals with a monoclinic structure or a white solid powder and is sometimes present in liquid form and is odorless. It is completely soluble in water but insoluble in alcohol. It is flammable and its flash point is about 93 degrees Celsius. When heated, it decomposes to emit toxic fumes. The most important physical and chemical properties of this compound can be summarized in the following table:

Chemical formula C6H10CaO4
Molecular Weight (g/mol) 186.2192
appearance White crystalline solid
Solubility in water (g/100 mL at 100 °C) 55.8
Solubility slightly soluble in methanol, ethanol
insoluble in acetone, benzene

Production Process of Calcium Propionate:

Calcium hydroxide is used to make calcium propionate. For this purpose, a solution of propionic acid containing 20-30% by weight of propionic acid and 70-80% by weight of water is used. The reaction is then performed by adding calcium hydroxide to propionic acid. To regulate the pH between 5 and 10, more calcium hydroxide is used, and then as a result of crystallization, the product is prepared and separated. The reaction equation of this process is as follows:

2C2H5COOH + Ca(OH)2 → Ca(C2H5COO)2 + 2H2O

With this method, the product will be about 99% pure.

Calcium Propionate Uses:

Backing Product:

calcium propionate is used as a food preservative. Due to its antifungal properties, this compound is found in foods such as bread, cakes, cooked products, processed meats, and dairy products, and leads to increased shelf life and slows down the rate of spoilage.

Consumption of calcium propionate in bread and bakery products is typically 0.1 to 0.4% by weight of flour used as a mold inhibitor. Mold contamination is a serious problem among bakers, and the conditions commonly found in baking have almost optimal conditions for mold growth. like calcium sulfate

Dairy Cows:

This salt is also used in the food industry to produce processed meat. In lactating cows, if the level of calcium in the blood reaches less than 5 mg/dl, it causes milk fever. Calcium propionate is used to fight this disease. Due to its solubility, this substance is added to animal feed in dry and soluble form.

However, the use of calcium propionate in dairy cows should be controlled at appropriate doses because an overdose has a hyperphagic effect on ruminants and may decrease the DMI of dairy cows.

Calcium Propionate in the Body:

The human body does not store this substance in its original form in the body, but in the digestive system, this substance is divided into its own constituent elements. A small amount of this volatile fatty acid is converted to lactic acid, and the rest is converted to glucose, which provides energy to the body.

Calcium Propionate Safety:

Calcium propionate is approved by the US Food and Drug Administration and is safe to use in food, but direct use of the compound itself can be problematic. If it is placed in a hot environment, it may catch fire. Therefore, it is better to keep in a cool and dry environment.

Packing and Storage:

Keep the container tightly closed in a dry and well-ventilated place.
