Description

A cellulose derivative with carboxymethyl groups attached to some hydroxyl groups of glucopyranose monomers is carboxymethyl cellulose under the trade name Tylose.

Production:

It is synthesized by alkaline catalyzed reaction of cellulose with chloroacetic acid. After the initial reaction, the resulting mixture also produces 60% and 40% salt.

Applications of Tylose:

This compound is non-toxic and has a high viscosity, which is why it use in a wide range of industries, which we will examine further.

Tylose in Food industry:

It a viscosity modifier or thickener use to stabilize emulsions in products such as ice cream, bread, and cakes. They use it in gluten-free food products to reduce fat. It also use as an emulsifier in biscuits, candy, chewing gum, margarine and peanut butter.
